The number-one reason gluten ages you is that it produces oxidation. When gluten is oxidized in your body, the sulfur-containing amino acids it possesses build a network between the fibers and cause protein to harden. When this occurs, parts of the body (like your skin) lose their suppleness and elasticity, leading to pain and sagging skin.
